FAQ

How Berbere Is Used?

Berbere is a cornerstone of Ethiopian cuisine, a vibrant red spice blend made from dried chili peppers, garlic, ginger, fenugreek, and a mix of warm spices like cardamom, coriander, and cinnamon. Its versatility makes it a staple in many traditional dishes.

How Is Mitmita Used?

Mitmita is a fiery spice blend with fewer ingredients than berbere, typically containing bird’s eye chili peppers, cardamom, cloves, and salt. It’s hotter and sharper in flavours, used in smaller quantities for specific purposes.

  1. Stews (Wot): Berbere is primarily used in Ethiopian stews like Doro Wot (spicy chicken stew) and Key Wot (beef stew). It’s added during cooking to create a rich, spicy, and aromatic sauce. The spice blend is usually sautéed with onions, garlic, and oil before adding meat, lentils, or vegetables.
  2. Marinades: Berbere is mixed with oil or yogurt to marinate meat, chicken, or fish, infusing the ingredients with deep, bold flavours.
  3. Seasoning: Sprinkled on vegetables, roasted chickpeas, or popcorn for a spicy kick. Added to soups and broths to enhance depth and heat.
  4. Condiment: Berbere can be combined with clarified butter (niter kibbeh) or olive oil to make a paste that’s served alongside meals for dipping or drizzling.

  1. Raw Meat (Kitfo):  Traditionally, mitmita is served as a seasoning for Kitfo—Ethiopian steak tartare made with raw minced beef mixed with clarified butter and spiced with mitmita.
  2. Seasoning: Sprinkled directly on raw or lightly cooked beef dishes (tere siga or gored gored).  Used to season grilled meat, adding heat and a touch of earthy spiciness.
  3. Condiment: Served on the side as a dry powder for diners to sprinkle on their food, much like table salt or chili flakes. Combined with lemon juice or butter to make a dipping sauce for meat.
  4. Spice Boost: Mitmita can enhance the heat of soups, stews, or any dish that needs an extra kick, but it’s used sparingly due to its intensity.

Key Differences

By Redieat Shiferaw Spicy Store

  • Berbere: Complex, aromatic, and versatile. It’s a full-bodied spice blend used as the backbone for many cooked dishes. •
  • Mitmita: Hotter, simpler, and sharper. It’s mainly used as a condiment or in raw beef dishes. Both spices showcase the rich, bold flavours of Ethiopian cuisine and offer endless ways to experiment in the kitchen!
